
A new Mexican-fusion fast-casual option has opened its doors in Southbury.
Bubbakoo’s Burritos officially opened on Friday, June 19, in the Southbury Green plaza at 775 Main Street South, marking its seventh location in Connecticut.
With nearly 150 stores across 35 states, the Point Pleasant, New Jersey-based chain also has locations in Oxford, Meriden, Stamford, North Haven, Norwalk, and Orange.
Franchisee Hiren Patel said the decision to open in Southbury came down to strategic growth, as well as the community itself. A lease was signed for the location last September, with permits received in December, leading to its opening this June.
The Southbury location employs about 18 people, Patel said, in the former location of a Yankee Candle store.

“The demographic here is interesting as well,” said Patel. “We have a couple of schools around here, and the community is the best thing. The town has been very accommodating.”
District Manager Abdu Mohammad said the menu’s emphasis on freshness and customization is central to its offerings, like bowls, burritos, tacos, quesadillas, taco salads, and more.
“Like I tell my employees, nothing here comes out of a can,” said Mohammad. “We have twelve sauces on our menu, which really helps bring it all together.”
The location’s signature item – the Chiwawa – is a panko-crusted, deep-fried cheesy rice ball that can be customized with the customer’s choice of sauces and protein.

Mohammad also personally recommends the Nashville Hot Chicken Burrito, a crunchy chicken-filled burrito with Nashville hot sauce, accompanied by cilantro-lime rice, black beans, shredded cheese, sour cream, and pickles.
To celebrate the store’s opening, the Southbury location is running a promotion through the end of July. Mohammad says ten winners will be selected to receive one free burrito per month for a year from the Southbury store.
Bubbakoo’s Burritos is open seven days a week from 10:00 a.m. to 9:00 p.m., except on Fridays, when it is open until 10:00 p.m.
